Pizza My Way

Every now and then Michael has to go out of town on business.  Sometimes I go with him and sometimes I stay home.  It just depends on where he's going and how long he'll be gone.  He was recently away for a couple of days and I was on my own.  It was the perfect opportunity to make myself a pizza that he usually is not interested in.  We used to love the same pizza, but our tastes have changed over the years and we can't agree on anything pizza related any more!

I don't like pizza sauce so I brushed on some pesto.


I topped it with provolone cheese and caramelized onions and mushrooms.


Then I added sliced tomatoes and basil


And topped it off with sliced mozzarella.


Baked it for twenty minutes and it turned out like this.


It was really good with a glass of Riesling (German of course)!

    My hubby and I agree on pretty much all food types, but sometimes he goes out of town on a fishing trip and I kind of like making myself something just for me and pouring a glass of wine. I usually rent a "chick flick" and make a night of it. For me it's a little break from being in the kitchen making something that everyone will like. (not always easy when there are teens in the house) My boys kind of just know it's "fend for yourself night" and they usually end up making themselves cereal or scrambled eggs. :-)

  2. That pizza looks amazing! My husband and I usually agree on most of our food choices, but when he goes out of town, I always enjoy creating myself something special.

  6. yummy. how did you do the dough? looks light and crispy.
    we had a husbandless pizza dinner yesterday, too -- my secret is to take only a tiny little bit of pizza sauce, pomodore, almost nothing, then buffalo mozzarella and sprinkles of olive oil.. but your version with pesto and fresh tomatoes looks even better. I'll try this the next time!
