I Love Spring


You might get tired of me saying it, but I can't help it.  Spring is my favorite season.  The temperature slowly climbs upwards so you can venture out without a jacket.  But it's not hot and humid yet.
Everything that was dead and dormant starts coming back to life.  Color begins appearing in all shades of the rainbow.  Birds are singing, the days are longer, people you meet out and about seem happier.
Yes, I love spring and you will probably hear me say it again!  But until then, here are more signs of spring around my yard.
(Except the azaleas which are in my neighbor's yard behind mine!)

It's Spring

Spring has finally sprung!  It's my favorite season and time of year.  I love how the flowers, trees, bushes, shrubs and grass start coming alive and filling the drab, dreary, dead landscape with life and color.  Spring means that cold weather is on it's way out.  It may take awhile to be completely gone, but old man winter is fading away.  This is how spring is looking around my yard.










I hope you're seeing signs of spring where you are.

Tortilla Soup

Even though where I live the temperature has been in the triple digits three days in a row, we still eat soup!  Yes we do, because soup is really a light meal on a hot day.  Maybe not all soups are light but this one is!  This recipe is easy and ready in 30 minutes!  Here is what you will need.  (The photo doesn't contain all the ingredients) 
1 Tbs. canola oil
1 medium onion chopped
4 garlic cloves minced
2-3 carrots or 10-15 baby carrots sliced
8 cups chicken broth
1 14oz. can fire roasted diced or stewed tomatoes
1 can Ro-Tel tomatoes with green chilis
1 Tbs. ground cumin
2 tsp. ground coriander
Pepper to taste
1 can black beans, rinsed and drained
1  1lb. bag frozen corn
6 cups or 2-4 cooked boneless chicken breasts, chopped or shredded
Juice of 1 lime
handful of chopped cilantro
Garnish - crushed tortilla chips, shredded cheese, diced avacado

In a large dutch oven over medium high heat, add the oil.  When the oil is hot add the onion, garlic and carrots.  Cook til the veggies are soft, about 5 minutes. 


Add the chicken broth, diced tomatoes, Ro-Tel tomatoes, cumin, ground coriander and pepper.  Bring to a boil, turn down heat and let simmer about 10 minutes. 

Add the beans and corn, bring back up to a boil and then simmer about 5 minutes. 


Add the chicken and continue to simmer another 10 minutes.  Remove from heat and add the juice of 1 lime and the cilantro.


Serve garnished as desired.

There is no right or wrong way to make this soup!  We like a LOT of stuff in our soup, but you don't have to put in as much if you don't want to.  Also, the Ro-Tel comes in different varieties and some are spicier than others, so you can make it as spicy or mild as you want it.

Summer Is Hanging On

Fall seems to be everyone's favorite season if you go by blog posts and overheard conversations.  I like fall but it isn't my favorite.  To me, fall is just the prelude to winter and I don't like winter.  If I had to rank the seasons in the order that I like them it would be:  spring, summer, fall, winter.

There are many things about fall that I like.  I can agree with everyone that the turning leaves are absolutely beautiful and breathtaking. The reds and crimsons, golds and yellows, oranges and browns are warm and inviting.  Throw in the smells and tastes of pumpkin bread, apple pie, hot spiced cider, candy corn and burning leaves and I can't help but like fall!  But honestly, I dread the cold and deadness of winter!

As I worked in the yard today, I saw signs of summer hanging on.  In the spring I planted azalea bushes that bloom three times a year if given enough light and water.  There are still flowers on those bushes!


I still have black-eyed susans

and petunias

and liriope.

I'm hanging on to summer for as long as I can!
